2 1/2 lbs. red potatoes quartered
1/3 cup diced onion
1/3 cup melted butter
3 tablespoons honey
2 1/2 teaspoons dry mustard
2 pinches salt
freshly ground black pepper
Preheat oven to 375 degrees. Lightly coat a baking dish with Pam. Place potatoes in a single layer and top with diced onion. Combine butter, honey, mustard, salt & pepper; drizzle over potatoes & onion.
Bake for 45 minutes, or until tender, stirring after 30 minutes.
